BAKE | MOMMY'S BANANA BREAD

I love going to Trader Joe's to pick bananas because they always have the greenest ones. You see, I only like to eat them when they are just ripe, still slightly green, and absolutely no spots. Which means that if (mostly likely when) they start getting spotty, I let them get real spotty, peel them, and throw them in a ziploc bag into the freezer. And after I collect 5 or 6 it's time to make banananana bread!

First, preheat the oven to  300°C.
Then, gather the ingredients (we made two loaves, but if you only want to make one you can half my recipe):
  • 4 eggs
  • 1 1/2 cups sugar
  • 1 cup oil
  • 3 1/2 cup flour
  • 6 bananas
  • 2 tsp baking soda
  • 1 tsp cinnamon (optional - but  I. love. cinnamon.)
  • pinch of salt

Blend the eggs, oil, and sugar together for 5-10 minutes.

Then, mash the bananas.
Add the flour, mashed bananas, baking soda, and salt to the mixing bowl.  Mix well.
Divide the batter into two well greased loaf pans. Bake for 55 minutes at 300°C or until toothpick comes out clean.


Enjoy thick slices spread with butter or eat it plain like me.
